Such cis bonds can be changed into trans ones during various extraction and processing operations as a result of oxidation, isomerization on heating, and/or partial hydrogenation. Animal and marine fats can have trace levels of naturally occurring trans isomers. Trans bonds isolated in the molecules of long-chain fatty acids, fatty acid methyl esters (FAME), soaps, and triacylglycerols (TAG) can be detected by infrared spectroscopy. A C-H deformation near a trans double bond gives rise to a band with the maximum absorption around 966 cm⁻¹ (10.3 µm), which is present in the spectra of all compounds that contain an isolated trans group.
